Squash Macaroni Soup

Have you ever tried making a macaroni soup without the cabbage and carrots? Well, we do it at home.

My husband's niece is a very picky eater. She don't eat vegetables. It just so happen that she loves macaroni soup. So, what we did is we smashed the squash a bit and put it in the macaroni soup so she could eat it. We put some chicken too instead of hotdog so it will be healthier.

It's just easy to make and is less expensive than the original macaroni soup recipe. Here's our squash macaroni souo recipe below.

INGREDIENTS:

  • Chopped onions

  • Chopped garlic

  • Boiled/smashed squash

  • Chicken meat (optional)

  • Pepper

  • Salt

  • Macaroni pasta

  • Water

  • Evaporated milk

PROCEDURE:

  • Heat your casserole, put the oil and fry the garlic until it is a bit toasted and add the onion and chicken meat.

  • Put desired amount of water. Just enough yo boil your pasta.

  • Put the water into a boil and add the macaroni pasta.

  • When the pasta is cooked, add the squash and the milk. Let it simmer for 2-3 minutes. Add some salt and pepper to taste.

  • Serve while it's hot.

You can also try it at home for your family. It's one way of having the macaroni soup for a change. It's a new way to make your kids eat vegetables without them noticing while enjoying a bowl of macaroni soup this cold season.
