Thankful Thursday. We are having a bright sunny day . I am very grateful for a chance to enjoy a new life and be with my family. It seems that we are moving on to a new normal life. I pray that we can soon freely move around with no restrictions and lots of requirements. Some provinces have loosened their strict requirements to enter their areas. That's a good sign. Thursday is my laundry day but my youngest daughter had lots of laundry to finish so I gave way. I only had a few dirty clothes to wash. So , I started cooking for lunch. I thought of cooking tortang talong but my daughter suggested that we make it into lasagna for a new flavor. We'll see what will happen. Meanwhile, I already boiled the eggplants to soften them before making torta. I am glad that the fresh eggs vendor passed by and I was able to buy. I decided to buy 2 trays. I am now loaded with eggs! Have a joyful morning!
