Risotto with dried mushrooms, why not try it?

An interesting dish that I stumbled upon by browsing the internet and found it interesting, so I said, “Why not try it?”. I bought all the necessary ingredients and started preparing.

Ingredients are:

  • dried mushrooms (four hundred grams of mushrooms can be fresh, but dry have a better aroma)

  • onion

  • garlic clove

  • water (two liters)

  • oil (one hundred milliliters)

  • rice (four hundred grams)

  • salt

  • pepper

  • hot peppers (optional)

  • eggs (three to four eggs) optional.

Preparation

We put dried mushrooms in lukewarm water to soften if you use fresh mushrooms there is no need for that. Then chop the garlic and onion head into cubes. Once we have chopped the onion and garlic, put the pan to heat and add the oil to it. In parallel, we put water in the pot, which we will use to soak the rice during cooking, to warm it up. When the oil has warmed up, add the onion and garlic to the pan, let them soften for a few minutes and get the color. Then strain the dried mushrooms and put them in the pan, when the onion and garlic have softened. Boil the mushrooms in a pan for a while until softened. Then add the rice and add the water in which the dried mushrooms were soaked. When we have done this let the rice cook and occasionally add the water we put in the pot to cook. When the rice is cooked, more eggs can be added to it, but of your choice. Season the dish to your own taste.

The dish is very tasty and very easy to prepare.
