Turkey's for life, not just for Christmas – and as a lean and relatively cheap meat, it makes this recipe a filling, affordable and super tasty meal.

Despite its low cost, this stuffed turkey with bacon recipe is such a treat.

Chicken might be the go-to meat for many, but turkey is slightly healthier than chicken, tastes pretty similar and conveniently tends to be a bit cheaper in supermarkets, too. Winner winner, turkey dinner.

That said, if you're not a fan of turkey steaks or breasts, or you just can't get your hands on any, chicken breasts will work just as well in this recipe. In fact, we actually used chicken when we made it ourselves, and we can confirm that it was still delicious (if not slightly more expensive).

Easy stuffed turkey wrapped in bacon recipe

Ingredients

Serves: 2 | Costs: £4.35* excluding wine (£2.18 per serving) Time taken: 40 mins

  • 2 turkey breast fillets (or chicken if you'd prefer) (£1.83)

  • 4 rashers smoked back bacon (£0.78)

  • 1 ball of mozzarella, sliced (£1.50)

  • 50g green pesto (£0.24)

  • Splash of white wine (optional).

Method

  1. If you're using white wine, leave the turkey breast fillets to marinade in a splash of it for about 10 minutes.

  2. Preheat your oven to 190°C.

  3. Using a sharp slice the turkey breasts through the centre (but not the whole way through).

  4. Place your sliced mozzarella inside the turkey breast and cover the outside of the breast with pesto. Season with salt and pepper.

  5. Take two rashers of bacon for each stuffed breast and wrap around the closed fillets.

  6. Place the fillets in an dish on a baking sheet.

  7. Place in the oven and cook for 25–30 minutes.

If you're feeling particularly peckish, you could always have both turkey breasts to yourself – but otherwise, serving a turkey breast with vegetables and potatoes makes this recipe perfect for two servings.
