Ingredients:
1 Cup sweet potatoes, diced
1 Cup taro roots (gabi), diced (optional)
1 Cup purple yam, diced
1 Cup plaintains (Saging na saba) diced or round cut
1 Cup tapioca pearls (sago) cooked
25 pcs. glutinous rice balls (bilo-bilo)
1 Cup shredded of flesh young coconut ( buko)
1 Cup jackfruit, shredded
2 Cups coconut milk (first extraction)
2 Cups coconut cream (second extraction)
1 Can (370 ml.) evaporated milk
1/4 kl. white sugar (adjust according to your preffered taste)
1 Cup ube or halaya
8 Pcs. pandan leaves or pandan flavoring.
1. Pour coconut cream in a large cooking pot and apply heat, let boil.
2. Put-in the sweet potatoes, purple yam and taro roots, pandan leaves or flavoring and simmer for 8 minutes.
3. Pour-in the coconut milk, evaporated milk, sugar, plaintains, jackfruit, flesh of young coconut, tapioca pearls then stir. Simmer for 7 minutes.
4. Add glutinous rice balls, Ube or halaya then cook for an additional 3 minutes.
5. Turn off heat and transfer to a serving plate.
6. Serve either hot or cold
How to make glutinous rice balls (bilo-bilo)
Ingredients:
2 Cups glutinous rice flour
1 Cup water
Procedure
Combine glutinous rice flour with water and mix until a dough is formed. Scoop about a 1/2 tablespoon of dough then mould it into a ball- shaped figure.
Cooking Tips
- Kapag nag crave sa ginataan kahit pa konti-konti lang ang sahog ok lang basta masarap ang pagkaluto lalo na kung lumasa yung pandan flavor o langka na hinog.
-Kung kulang sa gata mag add ng evaporated milk.
- Teknik para mas masarap ang hinog na langka. Ibukod ang pagluto nito. Isalang sa kawali na may konting tubig at lagyan ng sugar, lutuin hanggang sa lumambot at mag amoy mabango. Bago isalin sa nilulutong ginataan.
- Pwedeng matamisin muna ang mga sahog bago ihalo lahat para may maibukod para sa Halo-halo with ice.
- Bilo-bilo mabilis maluto kapag lumutang luto na kaya hinuhuli sya para hindi madurog pero naglalagay na'ko ng ilang piraso kahit madurog sya dahil pinapalapot din nya ang ginataan.
- Masarap kung may buko na malambot. Akma sa lasa ng ginataan at masustansya.
- Saba na hinog ang piliin mas masarap sa ginataan.
