Puto Flan or Leche Puto.
Ingredients: for Lechen Flan
6 egg yolk
1 can condensed milk
1 tsp vanilla
For Puto Batter:
2 cups Cake Flour
6 egg whites
1 cup white sugar
2 tsp baking powder
1/4 cup evaporated milk
1/4 tsp salt
11/2 cup water
11/2 tsp Vanilla
Procedures:
1. Boil water in the steamer in a medium fire.
2. Brush molds with butter.
3. In a bowl mixed egg yolks, condensed milk and vanilla.
4. Then put the flan mixtures in the molders enough to covered the bottom of the molder maybe around 2 to 3 table spoons. Steam for 5 to 10 minutes.
5. Beat the egg whites with the electric mixer until become fluffy then add the evaporated milk , cake flour, sugar, baking powder, salt, water and vanilla continue beating until all the ingredients are well incoporated and become smooth.
6. After 5 or 10 minutes check your flan , and pour in the puto batter, and steam again for another 10 to 12 minutes.
7. Let the leche puto rest for about 5 minutes before unmold.
