The main ingredients for this preparation are:
200gr of beef belly.
2 medium potatoes.
1 carrot.
1 small tomato.
6 cloves of garlic.
2 sprigs of chives.
Salt and mixed spices.
To begin this preparation, it is important to note that first we have to boil the beef belly for a minimum of 2 hours over high heat, this first cooking is very necessary since it will mainly serve to soften and improve its texture, if it is cooked without previously boiling the The belly will have a chewy consistency and it will not be pleasant at all to the palate, to avoid this we wash it very well under running water, put it in a pot and pour water until the belly is completely covered, cover the pot and let it boil for 2 hours .
We peel and cut all the ingredients, the carrot and the potato, we reserve it in a bowl, the garlic, the onion and the chives, we put it in a blender along with 1 tablespoon of powdered onoto, half a cup of water and blend at maximum power until obtain a homogeneous mixture without lumps, after this we pour the liquefied content into a frying pan over medium heat and wait for it to boil.
We take the beef belly and cut it into small pieces, this in order to distribute them evenly in the stew, once the liquefied content breaks to a boil, pour the potato, the carrot and the beef belly.
We mix the preparation well and season to taste, in my case I will add half a tablespoon of salt, a pinch of cumin powder and I will finish by adding a pinch of black pepper, now we just have to let it reduce until the water becomes a thick sauce.
