Tasty Recipe: Spicy Korean Inspired Pork Tenderloin

Pork Tenderloin

This is a delicious Korean inspired dish centered around a sweet, spicy sauce and succulent pork tenderloin guaranteed to sate any appetite. Serve with jasmine rice and roasted broccoli.

Ingredients

For the meal:

  • 400g Pork Tenderloin

  • 120g Jasmine Rice

  • 1 lime

  • Butter

For the sauce:

  • 4 tbsp soy sauce

  • 1 tbsp honey

  • 2 tbsp chili paste

  • 1 tbsp red pepper flakes

  • 2 tbsp rice wine vinegar

  • 2 tbsp sesame oil

  • 1 teaspoon chopped ginger

  • 3 cloves minced garlic

Method:

Total time: 30-40 minutes

Preheat oven to 210c

In a saucepan add the rice, cover with water and add a pinch of salt. Bring it to a boil then cover and simmer for 15-18 minutes. Remove from the heat, drain any excess liquid and keep covered until ready to serve.

Wash and dry the broccoli then cut into large chunks. Toss the broccoli with oil and season generously with salt and pepper then lay them on a baking tray and place them in the top of the oven for 15-20 minutes, turning occasionally.

Pat the pork dry and season well. Heat a little oil in a frying pan and sear the pork over a medium heat, turning occasionally until browned on all sides (6-8 minutes). Keep the frying pan to one side. Place the pork on a baking tray (or add to the one with the broccoli if there's room) then cook in the top of the oven for 10-12 minutes. Ensure pork is fully cooked through by slicing or using a meat thermometer.

Whisk all of the ingredients for the sauce together in a bowl. In the pan used for the pork place on a medium-high heat, add a small amount of butter and allow to melt, then stir in the sauce. Simmer until it's heated through and begins to thicken (2-3 minutes).

Fluff the rice with a fork and add lime juice, lime zest and butter to taste. Slice the pork, cover with the sauce and serve with the rice and broccoli. If you wish, sprinkle with toasted sesame seeds.
