World Milk Day is observed on June 1 every year. The day has been observed since 2001 at the initiative of the United Nations World Food and Agriculture Organization.

The first thing that mammals, especially human babies, demand right after birth is breast milk, so with the nutritious, liquid and digestible food that humans are introduced to early in life. And at the beginning of this year, the scientists gave the amazing news. That is, cows will no longer be needed for milk. In the future, unicellular microorganisms will be the main source of milk! Professor Tamir Tool of the Department of Biomedical Engineering at the University of Tel Aviv and food technology entrepreneur Ayal Ifargan, the two have created a surprise by inventing the technology to produce milk from the unicellular fungus yeast. Considering the color, smell, taste and structure of the milk along with the nutrients, the milk produced by the microorganisms does not go any less. Moreover, this milk is free from bad cholesterol and allergens. They said that by adding some more nutrients, it can be made better for health. This milk can be used to make high quality cheese.

Although the main source of milk in the near future is unicellular microorganisms, certain species of yeast used in milk production are very safe. Bakery and beer, the use of safe yeast in making alcohol has been around since the beginning of civilization. They grow in sweet juices of ripe fruits, sugarcane, dates, palms etc. and can breed very fast. Moreover, the additional advantage of production from microorganisms is that it is time-saving and can be produced as expected in a short time. You don't have to depend on the weather. And extensive grazing, agricultural land, labor and Water is not required; Eco-friendly.

Milk occupies an important place in our diet. But the lack of such food is becoming evident day by day. Production is not increasing by coping with demand. Milk production in New Zealand, the European Union and the United States, the three major milk exporters in the world, is not increasing. Although India tops the list of milk producers, it is not able to export milk commercially. Because almost all of the milk produced as consumers has to be kept for themselves. Cows are the source of 81% of the total milk production of about 75 crore metric tons of milk produced every year for the 600 million people of the world today. After that 15 percent milk comes from buffalo. The remaining 4 percent of milk is sourced from other animals such as sheep, goats, camels, donkeys, etc. By 2050, more than 200 crore People are going to be added to the current population. It will be very impossible for the growing population to produce extra milk. Because animal husbandry for milk, animal feed production will not be environmentally friendly at all.

The scarcity of clean water, arable land and a major source of livelihood, has begun to show. Moreover, methane gas produced by cows and buffaloes accelerates climate change. Which is not desirable at the moment.

Moreover, as much as our world produces renewable natural resources for human consumption every year, on August 22, 2020, we, the people of the world, have exhausted it. As a result, we had to spend the remaining four months of the year on credit. That is what the Global Footprint Network said. Considering these factors, biotechnologists are looking for alternative sources of milk.

Biotechnologists are showing the light of hope in producing incomparable milk from microorganisms in taste, smell and nutrition. Let milk be readily available to all the people of the world — this is the wish on World Milk Day today.
