This is a native snacks in some provinces of Philippines. It is called 'Sarungsong' in our province. It is a cone shape made with rice, coconut and sugar and wrapped in banana leaves. If you want to try making this, below is the recipe. You can divide the measurements if you want to cook just a few. 😉
Ingredients:
1 kg rice flour
500g brown sugar
4cups young coconut meat
1tbsp. Baking powder
1tsp. Anise seeds
2-3 cups coconut juice
Banana leaves (exposed to heat to wilt a little, so it won't open up when use)
Procedure:
Combine sugar and coconut meat. Mix it until it became watery or the sugar gets dissolved.
Add the rice flour to the mixture, together with the baking powder and anise seeds. Mix it until well combined.
Add the coconut juice(if coconut juice is unavailable, you can use water). pour in 2 cups first, if the mixture is too dry, add a little more, just pour in the liquid gradually until you get your desired stickiness and mix again until well combine.
Fold the banana leaves into a cone-like form, see to it that the batter can't scape.☺️ Put about 2 tbsp or according to your desired size or just the right amount that you can still seal it. Then seal the wrapper by folding it like a gift.😁
Put all your rice cakes in a cauldron, put about 4 cups of water. Cook it over medium heat for 45 mins. You'll see that it's cooked when the vapors coming out from it smells like it(coconut-rice cake) and the banana leaves turns into a darker shade.
Let it cool, and best serve with coffee.☺️
