The fish and the eggplant with coconut milk was the one i mostly love, it was so tasty kind of dish,and good for a meal in a whole day, even the sauciness of it will lead you to eat more rice and have a full stomach.Your mother was so knowledgable on cooking, your so lucky to be her child.
