Beef pair is popular in the Philippines.
It is commonly seen in the corners as a "pair".
It is one of the dishes prepared and sold in carenderia. The very tender beef and the taste of the anise are the reason why the Filipinos keep coming back. According to Connie Veneracion, the word "pair" in English is "pair" which literally matches this dish with rice. Its common partner is garlic fried rice.
Another type of it is, Beef Mami Pair, which instead of rice, it is added to mami. The secret to having a delicious and tasty meat pair is first, frying it first in oil until both sides are browned.
The taste and flavor of the meat increases before it is mixed in the stew.
1 tablespoon of lard 500g beef brisket (beef breast part), cut into small cubes
5-6 pieces or cloves of garlic 1 piece of red onion 1 piece small ginger (about an inch),
sliced 2 tablespoons of soy sauce 2 pieces of star anise Water for boiling beef
2 tablespoons of red sugar 2 tablespoons of oyster sauce
1 tablespoon liquid seasoning Crushed pepper
2 tablespoons cornstarch melted in
1 ½ tablespoon of cold water Onion leaves, chop
1. In a saucepan, place the oil and heat. Put the beef and cook.
2. Remove from the casserole and set aside first. Using the same pan, add the garlic, red onion and ginger.
3. Return the beef, add the soy sauce, red sugar, star anise, and moderate water until the beef is submerged. Do not overdo it so that the meat does not float.
4. Boil slowly, over low heat, for two hours or until beef is tender and half the water in the casserole.
5. Add the oyster sauce, liquid seasoning and crushed pepper.
6. Place the cornstarch dissolved in water to thicken the broth.
7. Extinguish the fire put around the chopped onion leaves. Serve with plain rice or garlic rice.
Tip / s: 1. Liquid seasoning - it is used as a seasoning. But without it, you can just use salt.
2. Casserole - it is best to have a ‘heavy bottom pan’ available, as it will prevent burning of the material underneath and to boil the pair for a long time without burning.
3. Two hours - if the casserole is repeated and continue to mix so that the bottom does not burn.
