Cake Ingredients for 20 people (26cm diameter false bottom shape):
6 eggs
250 gram sugar
330 gram wheat flour
16 gram Royal baking powder
100 gram cold water
2 tablespoons of emulsifier
1/2 tablespoon of vanilla extract
90g Frade red chocolate powder
10g Frade chocolate powder 100% cocoa
380g fresh pitted cherries and cut into 4 for filling
15 fresh cherries with little decoration
1 can of guarana soda
1 liter fresh cream
1 cup sugar
250g mascarpone
chocolate bar for shaving.
Preheat the oven to 180C.
Procedures to prepare it:
Grease the removable ring mold with butter or spray and cover the bottom and sides with parchment paper. (Sprinkle the spray over the wax paper to make sure it won't stick). Place the sugar, flour, eggs, water, emulsifier and vanilla, all together in the bowl of an electric mixer and beat for 5 minutes. At this point, slow down and add the chocolate powder (sifted). Beat until incorporated (2 minutes).
Remove from the mixer, mix with fouet to make sure the chocolate is well incorporated. Place the dough in the prepared pan and bake for 20 minutes in the oven at 180C degrees, then lower the oven to 160C degrees and bake another 20 minutes. Remove from the oven and allow to cool. While the cake is baking, beat the cream with the mascarpone and sugar until very firm. Reserve in the refrigerator. When the cake is cold, cut off the cake lid to make it flatter. Cut into 3 parts and fill each part with whipped cream and chopped cherries. Cover the cake and sides with a thin layer of whipped cream. Cut the zest according to the glass, using the chocolate itself. Cover the sides and on top of the cake with the zest. Sprinkle icing sugar on top of the cake and decorate with the reserved cherries. I encourage you all to prepare this and it might be tough to make but the result will make you so happy with those wonderful taste you will not forget ever and will encourage you to make more of these.
