Want some quesadilla with a Filipino twist? I got you!
I have appreciated Mexican cuisine ever since. And we can’t deny that there are a few similarities between their dishes and ours. That's why it isn’t too hard to get used to their food. Just like how it is with a quesadilla, which we can put on a little Filipino twist to make it more familiar and homey.

I’m happy that it is one of those Mexican meals that you can make at home. I’ve been a fan of their food for quite a while. It has this distinct flavor that kind of challenges your tastebuds. In short, they are really flavorful. Don’t even get me started with their signature salsa, which is one of my favorites. Speaking of salsa, you can actually make it along with this recipe. It would be a great dip for your quesadillas.
INGREDIENTS AND SUBSTITUTE
I used olive oil in cooking the stuffing. But any cooking oil will do too. Use the one that is readily available in your kitchen.
Minced beef tastes best with several Mexican like quesadillas and tacos. However, these foods are versatile and can accommodate different kinds of variation. So feel free to make your own version by using alternatives like chicken or pork.
Beef, corn, capsicum and taco seasoning
Red bell pepper will give your recipe an awesome flavor and slight spiciness. The color red’s gonna make the stuffing really colorful. Oh, and did I mention that it’s also very healthy and full of vitamin C?
I added some corn kernels for more texture and a little sweetness. Plus the thought of munching on some corn makes the recipe more enticing.
Mexican taco seasoning is needed to give it a more Mexican feel. Since making it yourself is gonna be a lot of work, it would be advisable to buy ready-made ones from the supermarket.
Cheese lovers will rejoice with the quick melt cheese that we will use for this recipe. If you love cheese so much, feel free to put in as much as you want to.
Get the best tortilla from your nearest supermarket. This is the key to tasting that Mexican authenticity. It’s also an ingredient in many other of their recipes.
HOW TO MAKE QUESADILLA
Get a pan and put it over medium heat. Put some olive oil, let it settle for a while then add the minced beef. Cook the beef until it turns light brown in color.
Add in the chopped red bell pepper, corn kernels, and Mexican taco seasoning. Stir them all together then cook for another 3 minutes. Season with enough salt and pepper. Set them aside for a while.
Cut the cooked quesadillas into 3, making them into triangle shapes. Transfer into a plate to serve.
MAKING AHEAD
For busy moms, they can use this recipe if they want to make some make-ahead quesadilla. All you have to do is separately wrap each quesadilla and place them in the freezer. But remember to let them cool first before doing so. This way, they can last for a month. Then you can serve them by heating using a microwave oven or frying pan.

Quesadilla Recipe
Quesadilla is a quick and easy dish that you can prepare for the whole family. You can enjoy it for snack or even for dinner.
INGREDIENTS
½ tsp olive oil
100 g minced beef
½ small red bell pepper
100 g corn kernel
1 tbsp Mexican taco seasoning
500 g quick melt cheese
6 pcs flour tortilla
INSTRUCTIONS
In a pan over medium heat, add the olive oil and minced beef. Cook until the beef turns into light brown.
Add red bell pepper, corn and Mexican taco seasoning. Stir and cook for another 3 minutes. Season with salt and pepper to taste. Set aside.
Heat the flour tortilla in a pan, add the minced meat and vegetables. Add quick melt cheese and fold the tortilla into half. Cook for 2-3 minutes on each side or until brown. Repeat the same procedure for the remaining ingredients.
Cut it into halt to make triangle shapes. Serve and enjoy!
