1. Basil pesto sauce

Pesto sauce is an excellent addition to pasta, appetizers, it can also be used to marinate meat and fish. The ingredients for it are not always fully present in the kitchen, but to make a truly delicious sauce, it is better to prepare!

Ingredients

  • Basil - 100 g

  • Nuts (pine nuts) - 1 handful

  • Garlic - 1 clove

  • Olive oil - 2 tbsp.

  • Parmesan (grated) - 2 tbsp.

  • Salt - 1 pinch

  • Ground black pepper - 1 pinch

Step by step cooking recipe

  • Rinse the basil leaves under running water, dry with a towel and put in a blender bowl.

  • Add pine nuts and a peeled garlic clove.

  • Add parmesan, salt, pepper and pour in olive oil. Cover the bowl with a lid and start grinding. If necessary, you can pour a couple of tablespoons of water.

  • The finished sauce can be served immediately or used to prepare other dishes.

2. Sauce Enchilada

Enchiladas are very easy to prepare and are often used in various Mexican dishes. This is a very flavorful addition that is ideal for rice, meat, fish, vegetables or snacks. If desired, you can make the sauce spicy by adding a little red ground pepper.

Ingredients

  • Flour (wheat) - 2 tbsp.

  • Tomato paste - 1.5 tbsp.

  • Water - 100 ml

  • Salt - 1 pinch

  • Cumin (ground) - 2 pinches

  • Garlic (ground) - 2 pinches

  • Ground coriander - 2 pinches

Step by step cooking recipe

  • Pour wheat flour into a hot dry pan and fry for 3 minutes, stirring occasionally.

  • Add tomato paste and pour in water. Continue heating and stirring so that there are no flour lumps left.

  • After another 5 minutes, add salt, dried ground garlic, cumin and coriander. For spiciness, add red ground pepper (optional). Stir and cook for a couple more minutes.

  • Pour the finished sauce into a gravy boat or bowl. It can be served immediately or used to further prepare more complex dishes.
