Materials
1 cup velveted Chinese in thin slices of beef, 1 cup of local onion cut in half, 1 cup of folded adakuchi, 1 teaspoon of adakuchi, 1 teaspoon of garlic, 2 dried chillies, 1 tablespoon of oyster sauce, 1 teaspoon of soy sauce. 1 tablespoon of back bean sauce, 2 teaspoons of sesame oil, 3 teaspoons of sugar, 2 duck eggs, 2 cups of cooking oil, 8 teaspoons of arrowroot, half a teaspoon of salt.
Method
01. Spread 2 teaspoons of arrowroot, 1 teaspoon of salt and 1 teaspoon of sugar on the velveted meat. 02. Heat 1 cup cooking oil over high heat. Lightly fry the meat in dipped oil. Do not fry too much, remove as soon as the pink color is gone. 03. Heat 3 tablespoons oil in another pan over high heat. Sprinkle the dried chillies in the oil. When it is a little fried, fry it with ginger and garlic. Give the folded onion. 04. When the onion is a little soft, add the meat. Stir in the oyster sauce, chili back bean sauce, soy sauce, salt and sugar for 2 to 3 minutes. When it gets hot, mix 3 teaspoons of arrowroot in half a cup of water. Pour in the roasted arrowroot meat. 05. When the broth thickens, stir in 2 teaspoons of sesame oil and place in a serving bowl. 07. Beat duck eggs, 1 teaspoon arrowroot and half a teaspoon salt together. 07. Heat oil in a large frying pan over high heat. The amount of oil should be such that the omelette is half fried in oil. Fry the omelette in half a dip of oil. Place the fried omelette on top of the cooked meat. 07. Heat 1 tbsp cooking oil in a separate pan over high heat. Stir in 1 teaspoon oyster sauce, 1 teaspoon chili back bean sauce, a quarter teaspoon salt, half a teaspoon sugar for 2 to 3 minutes. 09. Now mix 1 tablespoon of arrowroot in a quarter cup of water. When the broth thickens, pour in the remaining sesame oil. 10. Spread this broth over the covered eggs. Serve hot.
