Ingredients for Mutton Rogan Josh

  • Mutton- 1/2 kg

  • Cumin - 1/2 table spoon

  • Khoya - a quarter cup

  • Almonds-15

  • Large cardamom-2

  • Cinnamon-2

  • Clove- 4 to 5

  • Pepper - 1/2 tablespoon

  • Dry red chillies- 2

  • Red Chili Powder - 1 tbsp

  • Fennel powder - 2 tbsp

  • Ginger- 1 small piece

  • Coriander powder - 1/2 table spoon

  • Yogurt- 1 cup

  • Saffron- 2 tbsp

  • Garam masala powder - 1/2 tbsp

  • Asafoetida - in a pinch

  • Mustard oil - as estimated

  • Salt - as per taste

How to make Mutton Rogan Josh

First put the mutton in a large bowl and wash it thoroughly with water at least two to three times. Now put the pan on high flame and add oil. Let the oil heat up well. When the oil is hot, reduce the gas flame completely. When the oil is hot, add cumin seeds, cardamom, dried red chillies, cinnamon, cloves, asafoetida and black peppercorns. Fry them lightly. Now put mutton with these standing spices in the pan and slow down the gas flame and let it fry for a while. After 15 minutes, you can add some water and then cover it.

When the mutton is slightly melted, add coriander powder, fennel powder, red chilli powder and saffron and mix well. After adding spices, let the mutton fry for a while. Make almond paste, for this first boil the almonds and then peel them and put them in a mixer to make a paste. Also, grind the khoye. Add salt and curd to the mutton and cook well. Now add khoya, garam masala powder and almond paste. Cook the mutton on a low flame of gas till the mutton melts well. Your delicious and yummy Mutton Rogan Josh is ready. You can serve it hot with rice, kulcha, roti or naan.
