2 packages of Pasta (leaves) for Pasticho / Lasagna of 250 gr. (Direct to the oven) ā£
200 gr of grated fresh Parmesan cheeseā£
200 gr of Mozzarella Cheese in small piecesā£
Ā¼ cup of Olive Oilā£
1 chopped onion pica
2 garlic cloves diced
Ā½ liter of Milkā£
Ā½ kg of ground beefā£
Ā¼ kg Sliced āāhamā£
3 tbsp butterā£
3 tbsp Wheat flourā£
Salt and Pepperā£
Ā½ tbsp of Nutmegā£
2 bay leavesā£
5 Tomatoes, shells and seeds removed, choppedā£
4 tbsp breadcrumbsā£
1 egg yolkā£

šø Bolognese Sauceā£
ā£
1) SautƩ the Onion with the Olive Oil over medium high heat.
ā£
2) Add the Garlic and sautƩ for 2 more minutes, mixing from time to time.
ā£
3) Add the Meat, mix and fry for 15 minutes. Add the Tomatoes and bay leaves, cover and cook for 1 hour over low heat. Add Salt and Pepper to taste and cook 10 more minutes.

4) Remove and let it rest.

šøBechamel sauceā£
ā£
1) In a saucepan over medium high heat, add the Olive Oil and the Butter.
ā£
2) Once melted, add the Onion, Garlic and after 2 minutes lower the heat to medium. Add the Flour, Nutmeg, Salt and Pepper.

3) Mix until you see that there are no lumps.
ā£
4) Then add the Milk little by little without stopping beating. Once the milk starts to rise, lower the heat and continue stirring for 8-10 min.

5) Rectify the flavor and if necessary, add more Salt and Pepper.

šøPastichoā£
ā£
1) Spread butter in a baking dish.
ā£
2) Add a layer of Bechamel Sauce to the bottom of the mold.
ā£
3) Place a layer of Pasticho leaves (I always use the ones that are ready for the oven, otherwise, follow the instructions and cook them previously).
ā£
4) Add again a layer of Bechamel, one of Bolognese Sauce, Ham, Mozzarella Cheese and Parmesan.
ā£
5) Place another layer of Pasta and another of Bechamel, Bolognese Sauce, Ham and Cheese. So on.
ā£
6) On top add grated Parmesan cheese and a mixture of breadcrumbs with yolk.
ā£
7) Cover the pan with aluminum foil and bake for 25 minutes at 350 Ā° F.
