just a fun fact in the food processing world: You'll know which continent chocolate comes from by how fast it melts. most Asian, Africa and south American chocolates melt slower because they made it with more cocoa powder. it's in consideration with how hot it can get in those regions, especially around those near the equator. chocolates that melt fast, on the other hand are those made mostly in north America and, Europe and some parts of Eurasia. that's because they have more cocoa butter than cocoa powder
