Make fun raw biryani at home
Ingredients for making raw biryani:
Khasir meat (with bones) 1 kg, Polaway rice (better if it is desi kalijira, not basmati), 1 kg onion 2 (large), lemon juice 1/4 cup, ginger garlic paste 6 tablespoons, red chilli powder 1/2 Table spoon (if desired), green chillies 6 tsp, cardamom 4 tsp, black cardamom 2 tsp, cinnamon 2 pieces (1 ”long), bay leaves 2 tsp, mint leaves 1/2 cup, coriander leaves 1/2 cup, sour curd 1/2 kg, 2 tablespoons ghee, 2 cups oil, salt (as quantity), saffron / keora (2 pinches mixed in 1 cup water), tomato 1 tbsp, cubed potato (optional), 4 cloves powder, 1 nutmeg Powder, 18 teaspoons Jayatri powder, 1 tbsp cumin powder, 8 dried chilli powder, 8-10 potato chips, flour (as quantity)
Preparation-
1. Wash the mutton well and take it in a pot. Sour yogurt, ginger garlic paste, powdered spices, lemon juice, a little salt, oil well and close the mouth of the pot. After 2 hours the meat will be fairly marinated. However, if kept overnight, it will be very good marinade.
2. Grind onion and fry till brown. When cool, add coarse powder.
3. Fry the potatoes light brown.
4. This time wash the rice and put it in another container. Heat ghee in a pot. Stir in the chopped onion. When you see that the onion is soft, add cardamom, black cardamom, cinnamon and bay leaves. Stir for a while. Now add salt. Adding salt will not burn the onion.
5. Now pour the rice in the pot. 1 teaspoon ginger garlic paste in rice, start frying well with a little salt. When you see the rice sticking to the bottom of the pot, add hot water in such a way that the water is 1 inch above the rice.
. After a while when you see that the water is decreasing, there are less bubbles in the rice then lift the rice from the top of the pot and put it in another bowl.
. Pour the marinated meat over the half-cooked rice. Spread potato on top of the meat and add a little ghee and potato bokhara on it. Put some half-cooked rice on the potatoes in the next bowl. Sprinkle crushed mint leaves, coriander leaves, green chilli slices on it and pour the rest of the rice on it again. Pour saffron water over the rice and close the mouth of the pot well.
. Spread the flour with water. Cover the lid with flour. Leave the pot like this for 2 hours. It's called breath.
9. After 1 hour pour from the pot into the serving dish. Sprinkle tomato paste and fried onion on top and serve.
