Pinakbet ala Carlos!
Ingredients:
• 3 cloves of garlic minced
• 1 pcs medium size onion sliced
• 1 pc tomato diced
• Cooking oil
• 1 tbs of shrimp paste
• ¼ kg of pork or chicken diced (your choice or you can also use fried tofu)
• Squash (quarter cut) peeled
• 5 to 6 pcs of string sitao cut in 2 inches long
• 3 pcs eggplant cut into bite size
• 5 to 6 pcs okra cut
• 1 pc medium size ampalaya cut
• 30 gms oyster sauce
• 1 pack all in one seasoning granules
• ½ cup of water
• Salt and pepper
Let’s start cooking!
Heat a wok in a medium fire then add cooking oil. Saute onion, garlic and tomato until done. Add meat and continue stirring. Cover and simmer for 3 minutes. Add shrimp paste and continue cooking until meat is tender. Add squash, and cook in a minute then pour in the rest of sliced veggies. Mix well then add oyster sauce, all in 1 seasoning and water. Cover and cook for 5 minutes then add salt and pepper to taste. Simmer for a minute until done. Turn off the heat and we are ready to serve!
