Assalamu alaikum

Rainy days mean roasting meat with roasted khichuri, roasting liver or frying hilsa. When I saw the rain of Bengalis, I thought of Khichuri.

And on this rainy day, if the Bengali leaves have rice, pulses and liver, then there is no question. Enjoy with your loved ones from home this rainy season. And put the roasted khichuri on the leaves. But let's find out the recipe of Kolijar Jhal Bhuna Khichuri-

Materials:

  • Two cups of polao rice,

  • a quarter cup of dal,

  • Half a cup of chopped onion,

  • one teaspoon of ginger paste,

  • half a teaspoon of garlic paste,

  • half a teaspoon of turmeric powder,

  • one cup of liver,

  • Half a teaspoon of chilli powder,

  • one teaspoon of coriander powder,

  • one teaspoon of cumin powder,

  • cardamom, cinnamon, bay leaves, a few cloves, four kebab sugar,

  • half a teaspoon of hot spice powder,

  • Half a teaspoon of nutmeg jaggery powder,

  • Three tablespoons of ghee or oil,

  • Like the amount of salt.

Method:

A. First clean the rice and pulses, wash and drain the water. Now wash and boil the liver in small pieces.

B. Heat ghee in a pan and mix well with all the ingredients and liver. Now add rice and pulses again and cover with medium amount of water and cook over medium heat.

C. When the water is a little less, cover it with all the powdered spices and keep it on low heat. When the khichuri is done, lower it and serve hot with the salad.
