No Bake Empanada

Tired of your simple sandwich and it's boring filling? Tired of eating a hard meal in breakfast? Well cut all of that now !

Today, I'm going to share you a recipe that even your kids will love it too.

So let's start .

( INGREDIENTS )

For the Dough :

  • 2 cups all-purpose flour

  • 1 stick butter (or margarine cube)

  • 1/4 cup very cold water

  • 1/2 tsp. baking powder

  • 2 tsp. sugar (optional)

  • Pinch of salt

For the Filling :

  • 1/2 kilo ground chicken (or pork)

  • 1 medium-sized potato (diced)

  • 1 small carrot (diced)

  • 2 tbsp. green peas

  • 2 tbsp. raisins

  • Onion and garlic for sauteing

  • 1 tsp. black pepper

  • 1 tbsp. oyster sauce

  • One piece chicken broth cube

  • Soy sauce to taste

( Procedure for the Dough )

1) In a bowl, combine all the dry ingredients. Here's the following : All-purpose flour, sugar, baking powder, and the salt. Then mix it very well.

2) Carefully cut the butter into the flour mixture by using a fork. Cut it until it's totally mix in the flour mixture.

Note : You can also use pastry cutter instead of fork.

3) Once the butter was mixed in the flour, add in the water to the mixture, small amount at a time.

Note : Use your hand for easier mixing of water to the mixture. This is also to make sure that the flour absorbs the water well.

4) Once you achieve the right consistency you want, knead your dough for at least five minutes or until your dough smoothens it's texture. Then form it into a ball.

5) Put the dough in another bowl and cover or wrap it with plastic then chill it for at least 1 hour.

( Procedure for the Filling )

6) In a pan with oil of course, sauté garlic and onion until you smell it's fragrance.

7) Add the ground chicken, sauté it until the ground meat is cooked.

8) Now add black pepper, soy sauce and the oyster sauce, mix well. Add also the chicken broth cube and mix it again. Cover it with lid and let it cook for a couple of minutes or until the broth cube dissolves.

9) Once the broth cube dissolves, add the carrots and potatoes. Mixed it very well. Cover it again with lid and let the veggies cook until it tenders.

10) Once the veggies are slightly cooked, add green peas and the raisins. Mix it again, after mixing, cover it with lid and let it cook for a few more minutes.

11) Once it's cooked transfer it to a bowl then set aside to let it cool.

( Combining the dough and the filling )

12) Remove the plastic that you cover in the bowl, then put some flour in your working place, roll the dough and flatten it by using a rolling pin.

Note : You can divide the dough to make it flatten easily. Make sure to put some flour in the rolling pin too before using it.

13) Once it's flatten firmly, cut the flattened dough into circles. You can also use a lid or any circular cutter but i suggest you should use circular cutter.

14) Put the filling in the center of the dough. Gently wrap it by folding the dough into half like you're doing a half moon (D-shape). Wrap it very well, seal it by pressing the sides using your fingers, then double seal it by folding the sides. Secure the seal by pressing the sides using a fork.

15) In a pan with a big amount of oil put the stuffed dough. Make sure that the oil is hot before you put the dough.

Note : Cook the dough in low heat only to avoid burning the empanada.

16) If the dough turns golden brown its cooked. Serve it and enjoy !
