I spend my time on videos, but have a comment on your takeaways here... To the best of my understanding, E2EE doesn't necessarily mean that the host can't decrypt. Generally, when an application is provisioned such that the host can't decrypt, the term ZKE (zero knowledge encryption) is better suited. That isn't necessarily to say that either recommended service isn't ZKE, as I haven't researched them, but I would at least find it curious to learn they aren't advertising as such.
