This fun Fishy Friday dish is playing on its slang name of ‘to mean sex or have sex’ thanks to the addition of hot spicy smoked oysters ;))
Here the fried rice is done and being crisped on the bottom before adding in the eggs and smoked oysters to heat through. At this point the pot is vegan with the exception of my choice of using some of the spiced soy oil from the oysters to fry the rice. This could have been done with any other vegetable oil of choice.
Quickie how to:
I use this heavy weight nonstick fry pan as I like to use very little oil and to get a crust on the bottom with nothing sticking.
First scramble the egg and remove from pan.
In a couple of tablespoons of oil, sauté chunked mushrooms, chopped garlic, chopped onions and diced carrots about 5mins until par-cooked. Add cold cooked rice and break up into pan.
Add peas, chopped scallions, and chopped spinach, along with a shake of turmeric and cayenne if you choose.
Add oyster sauce and dark soy (or vegan substitutes.) and any other seasonings you like, and stir until rice is coated throughout. I like to make mine crispy in some places so I increase the heat to form a crust which gets scraped up and stirred in, hence the wooden spatula.
If vegan, then your dish is done.
Otherwise
Once flavors are to your preference stir back in the scrambled eggs and gently add the smoked oysters, taking care not to break them. Cover for a few minutes to allow the eggs and oysters to heat through.
