Today I will share you one famous Indian paratha recipe "Aloo Paratha". According food historian K.T Acharya the recipes for various stuffed wheat parathas are mentioned in 'Manasollasa', a 12th-century Sanskrit encyclopedic record compiled by king "Someshvara III",who ruled from present Karnataka.
There are several different types of parathas that are found across the nation. Paratha is an amalgamation of the words 'Parat' and 'atta'. This literally means layers of cooked dough. In India 'Paratha' is one such item that is popular across the subcontinent with local variations from various different regions. Hope you like the information.😊

Ingredients:-
For the dough:-
1. Whole wheat flour- 2 cups.
2. Salt- 1/2 tsp.
3. Ghee/oil- 1 tbsp.
For stuffing:-
1. Boiled an peeled potatoes- 3(medium)mashed.
2. Carom seeds-1/2 tsp.
3. Green chilies- 2(finely chopped).
4. Dry mango Powder-1tsp.
5. Chat masala- 1tsp.
6. Turmeric powder-1/2 tsp.
7. Kashmiri red chili powder-1/2 tsp
8. Cilantro leaves- 3tbso(finely chopped).
9. Salt-To taste.
10. Ghee/oil- as required for roasting parathas.
Preparation Method:-
For dough-
Step 1- Take a bowl add wheat flour,make a well in centre, now add salt,ghee and combine together. Add water and mix well to make a smooth soft dough.
Step 2- Cover the bowl and keep aside for 30 minutes.
For stuffing:-
Step 1- Take another bowl, add boiled mashed potatoes,Carom seeds, kashmiri red chili powder, Turmeric powder,chat masala, finely chopped green chilies,dry mango powder,salt, chopped cilantro. Mix all spices well with mashed potatoes.
To make paratha-
Step 1- Dust the surface with wheat dough. Take one of the dough balls, roll the dough with rolling pin.
Step 2- Place 2-3 tbsp of stuffing in the center (do not over fill).
Step 3- Bring all the edges together and pinch to seal the edges.
Step 4- Flatten the dough ball using your hands, now using the rolling ping roll dough to a circle of 7 inch diameter. Apply equal pressure while rolling. It will help to get circle shape automatically.
Step 5- Transfer the rolled paratha on to the hot flat pan(tawa). Cook each side for 1-2 minutes.
Step 6- Apply ghee on half -cooked side and flip again. Now apply ghee on the other side. Cook till golden brown.follow the same process for the remaining dough.
Step 7- Once get the golden brown texture, transfer paratha in a serving plate.
Step 8- Now it's ready to eat with white Butter and pickle.
