The rainy season ends as per the calendar. Autumn is on. However, it is raining in the month of Ashwin. This is why cooking khichuri is coming again. You can make it at home. You can easily make a little difference. Roasted chicken khichuri Materials 2 medium sized roosters, 2 cups of polao rice, 1 cup of mugdal, half a cup of crushed onion, 8-10 green chillies, 3 tablespoons of onion paste, 2 teaspoons of adabata, 1 teaspoon of garlic paste, half cup of sour curd, 1 teaspoon of chilli powder. Spoon, half a teaspoon of cumin powder, amount of salt, 3 tablespoons of ghee, half a cup of soybean oil, 2 pieces of cinnamon, 4 pieces of cardamom, 4 cloves and 2 bay leaves. Method Fry the pulses in a dry pan. Rice and pulses should be washed and drained. Chop the chicken meat to your liking. Sprinkle with salt, all bata spices, sour curd and leave for 20-25 minutes. Heat oil and fry with hot spices. Fry the onion and add the spiced chicken for a while. Cook for 5-6 minutes with 1 cup of water. Remove the meat and fry it for a while with ghee, rice and pulses. When the khichuri water is reduced, add the picked meat, green chillies and some barista. Stir the khichuri in such a way that the meat goes inside. Sprinkle some barista on top, cover well with a lid and simmer for 20-25 minutes.  Roasted chicken khichuri Khaled Sarkar Hilsa khichuri Materials 1 large hilsa, 3 cups of polao rice, one and a half cup of mugdal, half a cup of crushed onion, 8-10 green chillies, 3 tablespoons of onion paste, 2 teaspoons of ginger, 1 teaspoon of garlic paste, 1 tablespoon of poppy seeds, 3 tablespoons of pickle Spoon, 1 teaspoon of mustard paste, 1 teaspoon of turmeric powder, 1 teaspoon of chilli powder, half a teaspoon of cumin powder, the amount of salt, 3 tablespoons of mustard oil, half a cup of soybean oil, 2 pieces of cinnamon and 4 cardamoms. Method Cut the hilsa fish into pieces. Spread mustard oil, salt, all bata masala with sour curd for 20-25 minutes. Cook in the oven with 1 cup of water for 4-5 minutes. Sometimes you have to turn it upside down once. Fry the rice in a dry pan. Rice and pulses should be washed and drained. Heat oil and fry onion with hot spices. Fry rice and pulses for a while. Serve with hot water and salt. Cover with a lid and cook. When it boils, remove the previously cooked hilsa fish. Cook over low heat with oil-broth spice khichuri. When the water is low, take out some khichuri and leave it. Arrange hilsa fish and green chillies in the khichuri in the pot. Now press it with the raised khichuri and cover it well with a lid. Simmer for 25-30 minutes and serve.  Hilsa khichuri Khaled Sarkar Dahlia khichuri Materials Half a cup of mugdal, 1 cup of dahlia (half broken wheat), 1 teaspoon of ginger, 1 tablespoon of crushed onion, half a teaspoon of cumin, half a teaspoon of fenugreek, 2 tablespoons of ghee, 1 teaspoon of turmeric powder, 2 green chillies -3, potato-cauliflower-carrot-peas-tomato 1 cup chopped (vegetables can be given according to the season) and salt according to the amount. Method Lightly fry dahlia and mugdal in 1 tablespoon ghee. Put 2 cups of water in a pressure cooker with 2 whistles. Heat the remaining ghee in a pan and stir in the cumin, kasuri, fenugreek, all the vegetables, turmeric, green chillies and salt. Pour dahlia and cook with 2 cups of hot water. When the water is low, take it down.  Dahlia khichuri Khaled Sarkar Latka khichuri of beef Materials Kataribhog 4 cups of rice, half a cup of lentils, half a cup of masakalai pulses, half a cup of mugdal, half a cup of gram pulses, one and a half kg of beef, half a cup of crushed onion, 2 tablespoons of ginger, 1 tablespoon of garlic, 1 tablespoon of coriander Tea-spoon, 2 teaspoons of chilli powder, 1 teaspoon of turmeric powder, half a cup of sour curd, 4 pieces of
