Ingredients
800gr. chicken leg fillet
300gr. barley medium
800gr. fresh, grated tomato
150gr. chopped onion
1 glass of wine wine
100gr. grated kefalotyri
600ml chicken broth
Or a bunch of mint leaves, finely chopped
30ml olive oil + 40ml for the end
salt, freshly ground pepper
Preparation
Cut the chicken fillets into bites. Preheat the oven to 200 degrees.
Put a pot (which can be put in the oven) to burn on very high heat and sauté the chicken with olive oil for 2-3 minutes, to get color on all sides. Season with salt and pepper.
Take the chicken out of the pot, add the onion, a little olive oil and lightly sauté. Add the barley to sauté for 2 minutes, to polish. Extinguish with wine.
Put the grated tomato, chicken broth, salt and pepper in the pot and stir. Put the pot in the oven and bake for about 15 minutes, until the barley is puffed. Add the chicken to the pot and cook for another 10 minutes.
Remove the pan from the oven, sprinkle with the grated cheese and put the food back in the oven for 10 minutes.
Remove the stalks from the mint, finely chop the leaves and add them to the food along with a little more olive oil. Taste the food, season with salt and pepper if necessary and serve on plates
