90 gr. butter at room temperature
400 ml. whipping cream
60 gr. powdered sugar
500 gr. cream cheese at room temperature
raspberry jam for garnish
Preparation
Preheat the oven to 180 ° c. Prepare the cookie base: Crush the cookies by hand in a pan with a round hoop. Add the butter in small pieces and mix with your fingers, until the mixture has the texture of wet sand. Press the surface with a spoon to make it uniform. Bake for 10 minutes and then let the cookie cool. Prepare the cream cheese: With a hand mixer, beat, at medium speed, the cream with the icing sugar, until it acquires a viscous texture. Add the cream cheese and continue beating until the mixture is homogeneous. Spoon the cream cheese on the cold biscuit and place in the freezer for 2 hours, until the cream stabilizes. Spread the jam on the cream cheese, unmold the cheesecake and serve cold.
