How to make red velvet cake

hello fun community of read.cash, I was waiting for the post of my first Red Velvet cake, which I made on Thursday, April 21 for my mother's birthday, I am not a professional pastry chef, but I do like to cook and learn and although I had to adapt some ingredient changes, but it is normal in the face of adversity to change some things to achieve the objectives.

Red Velvet Cake INGREDIENTS.

1-1 kilo of wheat flour, with yeast 2- 1 kilo of sugar 3- 750 milliliters of whole milk 4- 100 grams of cocoa powder 5- 7 whole eggs 6- 15 grams of baking soda 7- 15 milliliters of vanilla 8- 10 milliliter of vinegar 9- red gel coloring 10- 360 milliliter of oil

for the frosting

1- 1 kilo of icing sugar 2- 450 grams of unsalted butter 3- 450 grams of cream cheese

Elaboration process

In a bowl place the milk with the vinegar for 10 minutes to make the buttermilk, this is done to find moisture in the cake

In another large bowl, sift the dry ingredients with a strainer: the wheat flour, the cocoa powder, the sugar and the baking soda.

With an electric mixer preferably, beat the whole eggs, the oil and the vanilla, until you get a fluffy texture

slowly add the milk to the bowl where the flour is and continue mixing and little by little add the mixture of eggs and oil, with a wooden paddle, until all the more has a creamy texture and finally slowly add the coloring using the whisk electric until it turns red.

place the same amount of mixture on three trays that are the same size and bake at 200 degrees, the time will depend on the amount and the type of oven, but the important thing is to place a toothpick inside the cake and if the toothpick comes out dry the cake is ready.

Once the cake is at room temperature, proceed to cut the top and the edge so that they are the same size on all sides.

To make the white cream you have to sift the icing sugar in a large bowl and place the unsalted butter and with an electric mixer beat and slowly add the cream cheese and beat until you have a creamy texture and place this cream in the fridge for an hour, so that it has a stronger consistency.

the first cake is placed and filled with the cream and the next cake is placed on top to do the same procedure and the entire cake is covered on the sides. and with the cut edges you can sprinkle a little on top of the cake and with the remaining cream and the remaining crust you can mix them into small balls by kneading them and adding them around the cake and that's it, it's a fairly simple process.

If you look at the photos, the trays for the cake are not the same size and there was an ingredient that did not have apple cider vinegar and lemon according to the original recipe, but I changed it for normal vinegar to make the butermilk and that is that sometimes there are to adapt to achieve the objectives, I also had some small problems with the size but the cream helped a lot so that it would not be noticed, in the same way it is the first time that I make this red cake and I could see what I had to correct for the next time I can make it, but the most important thing is the taste, it turned out well and people liked the taste and texture, so if they want to make a dessert and they don't have all the ingredients, there are always ways to substitute them with others that allow you to make dessert and also learn new techniques or new ingredients to achieve your own style.

the other dessert in the photo is a typical sweet from venezuela called kisses de coco and is made with three ingredients cane panela also known as papelon and is similar to brown sugar, all-purpose wheat flour and grated coconut, these ingredients They are mixed and baked for approximately 30 minutes. It is a very popular dessert due to the simplicity of its preparation and its low economic cost, and it also has the benefit of not having any sugar.
