Weeknight Dinner Decided to make something quick and simple tonight! It’s fish fillet in garlic butter sauce with rice and spinach on the side. I tried my very best to make this a one-pan dish (because who likes washing dishes, right? Lol!) but I really had to make the sauce in another pan. For the spinach, they’re just sautéed with garlic in olive oil with a little salt and pepper. For the fish fillet, I first seasoned them with salt then lightly coated them in plain flour then pan-fried until golden brown. The sauce is just butter, garlic, salt, pepper, mayonnaise, and a dash of lemon juice at the end. Resulting dish was quite filling!
