Do you crave to making an easy breakfast recipe using an Irish potatoes, save yourself the stress of long hours of making breakfast, make a Golden Skillet Potato instead. This is a recipe that's one of the all-time favorite breakfast recipes, because it's super quick and easy too.
INGREDIENTS NEEDED;
10 medium Irish potatoes, finely diced.
4 pieces sausage, diced.
1 large green bell pepper, diced.
1 medium red bell pepper, diced.
1 medium onion, diced.
2 garlic cloves, minced
2 seasoning cubes
1/4 teasepoon curry powder
1/8 teaspoon thyme
1/2 teaspoon ground pepper
4 table spoon olive oil.
Salt to taste.
PROCEDURE;
place diced Irish potatoes in a vegetable steamer and leave to steam for 5minutes. Alternatively, you can put potatoes on a flat plate, place in a microwave oven on high heat and allow to cook for 5minutes. Meanwhile, in a skillet, heat up 1 table spoon olive oil, add diced sausage and salt on medium heat for 2 minutes. Transfer to a flat plate and set aside, add the remaining olive oil to the same skillet and allow to heat up on medium heat.
Then transfer steamed potatoes to the skillet,ensure the potatoes do not overlap each other, avoid stiring it at this stage/time. Leave to cook for 5minutes before turning it around with a spoon, after then add seasoning cubes, curry powder, thyme, pepper and salt to taste. Then stir to combine. Then add onions and garlics stir to combine.
Leave to cook for another 3 minutes or until potatoes are soft but not too soft. The reason is not to end up with soggy potatoes, then add bell pepper and stir to combine. Finally add sausage, stir again to combine and turn off heat immediately.
Now you are done, preparing! You can serve this dish with plain omelette or on its own with a cup of tea or fresh juice.
