We have been hooked ever since our favorite fast food chain introduced Orange Chicken in their menu. We just love the citrusy flavor of the orange in the chicken.
Since all the members of the family love it, I tried to emulate the recipe so that I can cook it myself. I looked for recipes on our friendly google and found plenty. But knowing my capacity to cook, which is so limited, I scout for the easiest recipe.
Finally, I found one. Cooking the chicken does not require a lot of expertise. It is just frying the chicken pieces but the sauce is exactly the opposite. But since I found one that is very easy, I have no difficulty in providing such delicious meal.
Now, every event we have at home, birthdays, fiestas and Christmas, the orange chicken always finds its way to the table.
Yesterday, was the feast of St. Michael the Archangel. He is the patron saint of our small chapel. I was assigned to cater the dinner for the priest. It was a sudden request as they only informed me the day before. Gladly, I had already made my grocery shopping so I don't have to buy for ingredients on what I planned to cook. And one of them is orange chicken.
Here below is how we made the orange chicken.
The ingredients are
Chicken breast - sliced into strips
Egg - slightly beaten
All purpose flour with a little bit of cornstarch
Ground Pepper
Salt
Cooking oil
For the sauce :
Orange Marmalade
Barbecue Sauce
Steps in cooking :
Season the sliced chicken breast with salt and pepper. Dip the chicken into the beaten egg then into the flour mix.
Deep fry the chicken until golden brown.
Set this aside and start cooking the sauce.
I am just sorry as I was already in a hurry and forgot to take pictures of the sauce mixture.
Anyways, just mix the orange marmalade and the barbecue sauce and put in a pan. Heat up until boil but with constant stirring.
Add the fried chicken into the sauce and stir until all the chicken pieces are coated with the sauce.
Add slices of fresh orange before serving.
Note : You may also prepare the sauce from scratch. There are a lot of recipes for this too.
