My Vegan diet/ gluten free.

I was thinking about what to write today in Read Cash and it occurred to me to talk about my plant-based diet.

Well, in this post I'm not going to delve into the ethical question, or why I stopped eating meat, or why you should stop eating it. Well, I'm not going to talk about that because I don't feel like writing about it and I don't want to get into endless debates. For as much as I get tired of talking, no one is going to change if they don't want to.

I am simply going to prove to you or to the majority of people who think that a vegan cannot live without animal products, that it is possible. I have been 10 years without consuming animal meat, milk, eggs, fish, or anything that comes from animals.

I must clarify that being vegan does not mean being super healthy, because at least I chose it for ethical and moral reasons. But of course there are other people who do it for diet or fashion, but in my case it's because I respect animals, I'm an animalist and obviously I'm not going to eat them.

So my diet is not very healthy either, I would say it is relatively common. I also have a health problem, which comes from before I converted to veganism. Maybe it's genetic, I really don't know, in my family we all have irritable bowel problems. Also after a gallbladder removal 3 years ago, I started having problems with gluten.

This idea came to me because in Noisecash a user from the United States asked me, how was being vegan in Latin America. Then I thought that for people from other countries, especially from North America, we are like some kind of beggars 😅😫.

Well I don't know how they live it in other Latin American countries, but I'm from Chile and here the economy is good, plus there are enough products in the market for common vegans and vegans who also have the plus of gluten intolerance. Of course it is a much more expensive food than usual, because of the special process of gluten-free foods. But I can afford it, not that I think I'm a millionaire, I just have priorities and one of them is my diet.

Without anything else to add now I will leave you some ingredients that I use because they are delicious and have become my favorites by far.

I love to drink red fruit smoothies and add almonds, sesame seeds, chia, sunflower, pumpkin and hemp seeds.

Vegetable milks of all kinds, but the most delicious and healthy is the one I prepare myself with natural almonds.

During the week my dishes are quite varied, but one of my favorite is lasagna. I have had to change the pasta for a gluten-free one, but sometimes I prepare it with Italian squash instead of pasta.

I have also found a bechamel sauce that is perfect for me. I must admit that I don't like to cook much, so I try to buy all the ingredients and make them as natural as possible. Although I also supplement with a lot of vegetables.

Sorry folks but I was really hungry and had already bitten into it all. Although it doesn't look that appetizing, it was delicious 🤤.

Other foods...

This vegan burger is ideal to eat sautéed with tomato sauce. I always add it to some brown rice.

This is my favorite soy meat, it is much softer than the others and it is organic. It has a very special flavor.

Recently, while grocery shopping, I came across these sausages. I haven't tried them yet, but I've been told they are very tasty.

Quinoa and amaranth are very nutritious. Together they are the perfect complement to all my dishes.

But my favorite dish is lentils, I like them very much. The bad thing is that my doctor told me I can't eat them 😭.

People ask me how I can remain vegan with intestinal problems. Well, you can, you just have to try before you give up and stay in your comfort zone. I have read a lot of people who decide to stop being vegan and start talking bad about veganism. The funny thing is that they are really ignorant people on the subject, they have not even informed themselves before following this diet and because of their own irresponsibility they blame this way of life.

we have to admit that everyone has a different view on life and also the almighty creation. respecting and providing protection to other creatures is a form of something that must be appreciated. I give an example of why I don't eat dogs because I also have dogs and I love them. and from what has been discussed in this topic a conclusion that I can draw is that respecting and protecting animals is based on concrete actions to avoid consuming this species. maybe few people like you but i have to give good appreciation for this action.👍

I really liked the sincerity in which you approach the subject, saying that you are not healthy because you are vegan removes many paradigms because that is one of the advertisements with which they sell being vegetarian that will give you extreme health and it is not necessarily so.

It is appreciated that you are a person who first researches, educates himself and then makes the decision, all your recipes look so rich that provoke.

I recently found out that vegans don't consume honey either because it obviously comes from an animal. There is a lot to learn about vegetarianism and veganism.

What happens is that there are different types of vegans, in my case it is because of animal advocacy. While for others it is for diet and health. Veganism was created to defend the life of animals and their rights, but nowadays people take it in a wrong way. It is true that it is healthy, but not all vegans are so interested in being so strict in terms of health. Our main interest is the life of animals.

My son tried to be vegan two years ago. And the truth is that here in Venezuela, it was very expensive and difficult to maintain a balanced diet. In the end, he quit it of his own free will. You have managed well to combine the vegan diet with the gluten-free. I think that here it would be something difficult to achieve.

Saludos!

That is great you are eating well as a vegan, I am allergic to soya I found out years ago when my doctors told me to try soya milk as I have had arthritis since I was 12 and they tried to change my diet. So no soya for me! I eat what I am comfortable with.

We all have different intolerances, you to soy, me to gluten. So we'd better take care of ourselves 😊.

One thing I will always admire about Vegans is their discipline and dedication to what they choose to eat. Whenever I embark on giving up a food or craving I always end up falling back. Those are really good food friend.
