Hi! I am an avid fan of Chef RV Manabat and I also happen to love baking. So today, I will share to you his awesome recipe that will surely melt your heart and satisfy your chocolate cravings!
This recipe could also be turn into cupcakes. One recipe will make 2-3 dozen of 3oz cupcakes. What are you waiting for? Grab the whisk and let's get baking!
Ingredients:
Cake:
2 cups all purpose flour
3/4 cup cocoa powder
1 1/2 teaspoon baking powder
1 1/2 teaspoon baking soda
1 tsp iodized salt
2 cups brown sugar
1/2 cup corn oil
1 Tbsp plain white vinegar
2 cups room temperature water
Frosting:
2 1/2 cup heavy cream or all purpose cream
2 cups dark chocolate chips/chopped chocolate (Belgian, if possible)
1/4 cup salted butter
Procedure
For the ganache: Pour the cream in a sauce pan over medium low. Put in the dark chocolate. Stir using a wire whisk. Once the chocolate start melting, turn off the heat. Into this, put the butter and continue stirring until it melts.
For the cake: In a clean mixing bowl, put in the flour, cocoa powder, baking powder, baking soda, iodized salt, brown sugar, corn oil, vinegar and water. Using a wire whisk, mix it with love.
Strain the mixture into a 12x10 inches baking pan or two 8 inches round or rectangular pan.
Bake in a preheated 350°F oven for 35 minutes or until the center of the cake is almost firm. Do not wait for it to be super firm because the finished product will the be tough.
Once cooked, put the pan over a cooling rack.
Pour the ganache on the top of the cake. Set aside for around an hour in a room temperature to cool completely.
Cover the top with good cocoa powder for decoration.
To make it gooey, put it inside the fridge to let it mature.
