The Paleo diet excludes cereals, pulses, dairy products, sugar, salt, because these foods appeared in the Neolithic era, at the time of the agricultural revolution (cultivation, breeding). The question of oils is debated. Some researchers consider that they have no place in the Paleo stricto sensu diet since they are processed foods: it would be necessary to consume oilseeds (olives rather than olive oil, etc ...). Other researchers believe that they can be included in the diet because it must show some flexibility.

In the United States, it was Loren Cordain (photo 1), a professor in the Department of Health and Exercise Sciences at Colorado State University and a member of the American Institute of Nutrition, who has developed in his book, The Paleo Diet , how the Paleolithic diet could adapt to American culture. The book The Prehistoric Diet by Thierry Souccar (photo 2), journalist and French author and publisher of books on the themes of health, nutrition, well-being, sport, describes the dietary aspects of human evolution and the physiological and clinical consequences of modern diet.

For its part, the book by American author Mark Sisson (photo 3), The Paleo Model , takes up the dietary principles of the Paleo diet and enriches them with advice on physical exercise, play, social relations, to reproduce the different facets of pre-agricultural existence. In France, Marc-Olivier Schwartz (phhoto 4), paleo pioneer and Thomas Renoult, chef (photo 5) have adapted the diet in Manger Paleo , a practical guide with menus and recipes.

The recommended "diet" is based on a few major basic principles:

Eat lean meats, fish and seafood, fruits and vegetables without starch at will;

No grains, legumes, dairy and processed foods.

This diet is quite similar to that of the French surgeon and researcher Dr Jean Seignalet (1936 / 2003- photo 6), as explained in his book The food or the third medicine . Designed to reduce autoimmune reactions, Dr Seignalet stresses the importance of consuming raw foods as much as possible. Its five main rules to follow in order to get as close as possible to a diet suitable for our genes, while maintaining a normal sociable life, are:

Exclude cereals except rice and buckwheat;

Exclude animal milk and their derivatives;

Consume a majority of raw products (meat, fish and eggs included);

Use virgin vegetable oils, obtained by first cold pressing;

Whenever possible, prefer products from organic farming.

Green vegetables and legumes are allowed, provided they are gently steamed. The massive consumption of raw vegetables and fruits is encouraged. Protein should preferably be ingested during only one of the three daily meals.

Carbohydrate source foods

Cereals: wheat, soy, corn, rice and their derivatives: flour, pasta, cakes, breads, brioches, etc.

Any form of sugars (honey, syrups, jams… and other starches, fructose, glucose, gluten, dextrose, lactose…).

All dairy products and derived products as well as all vegetables with high glycemic indexes.

Paleo-ketogenic diet

Animal fats and proteins (meat, fish, eggs, certain cold cuts).

Some green vegetables.

Nuts (having been soaked or roasted… not treated or processed).

Health effects

The Paleolithic diet is not a dietary measure to be followed over a limited time to lose the few extra pounds that spoil the silhouette. On the contrary, it is a way of life to be adopted definitively to prevent or cure a certain number of chronic diseases. The weight loss, proven, would be in a way only the first visible effect of the benefits of this diet.

According to Loren Cordain, a return to food sources would make it possible to fight against Syndrome X diseases (hypertension, type II diabetes, cholesterol, cardiovascular diseases, obesity, acne, breast, prostate and colon cancers, etc.) but also against osteoporosis, asthma, certain digestive disorders (constipation, hemorrhoids, ulcers, stones, etc.), inflammatory diseases such as rheumatoid arthritis or multiple sclerosis, or even skin cancer.

For Jean Seignalet, the observation is identical: most of the scourges of public health today could be avoided thanks to the adoption of this regime. During his career, he thus successfully tested the effects of this diet on diseases still poorly treated by conventional medicine such as fibromyalgia, multiple sclerosis or rheumatoid arthritis.

The health benefits of the Paleolithic diet are directly attributable to a high protein intake (faster satiety, reduction in bad cholesterol, lower blood pressure, improved insulin metabolism), fruits and vegetables in quantity (better acid-balance. basic, cancer prevention and regulation of intestinal transit), with substantial contributions of omega-3 (prevention of cardiovascular diseases). But also excluding salt, sugars, starches, gluten and dairy products (whose proteins are strongly antigenic).

On the other hand, badly led, this diet could provide too high quantities of animal products and too few plants, which can increase the risk of certain diseases such as digestive cancers.

The Paleolithic diet encourages eating more protein, more plants, more omega-3s and less carbohydrates. Sugar, salt, cereals, milk and its derivatives and processed foods should be avoided or strongly limited. Vegetables, fruits, roots and seeds should be favored while the use of cooking may be minimal. By eating what corresponds to the original functions of the body we certainly lose weight but we could also prevent a number of diseases. We can thus understand that it is the object of many criticisms (charlatanism, sectarian spirit ...) as it calls into question the excesses of the business supply by the actors concerned, the subservient medical body included. Which in the end is rather a good sign ... 

What does the research say?

The establishment of the diet of our ancestors is a subject of scientific research. As such, the composition of the ancestral diet is likely to vary according to the pace of new discoveries. The prehistoric diet as advocated by Loren Cordain or Jean Seignalet could also be distorted by the fact that the choice of foods of Paleolithic men depended on hunting, climate, seasons, etc. So that today we have all the food we want at our fingertips.

Debates focus on the place of meat products in this diet, although it is possible to follow a mainly vegetarian Paleo diet.

On the other hand, the benefits of a diet rich in fruits and vegetables, sources of vitamins and antioxidants, on the prevention of cancer, hypertension, osteoporosis are proven. Likewise, increased consumption of foods rich in omega-3s (fatty fish, rapeseed or walnut oils, walnuts, leafy green vegetables) has been associated with a decreased risk of cardiovascular disease.

In addition, recent research shows that it is the carbohydrates that appeared with the Neolithic and the advent of agriculture (cereals and milk sugar) that have the highest glycemic indexes (GI). However, the consumption of foods with a high GI has been associated with weight gain and increased sensitivity to insulin, and therefore a greater risk of type II diabetes.

Intervention studies with the paleo diet have shown favorable results, especially in people with metabolic syndrome and diabetes. But there are no long-term studies available and it is not known whether these benefits last, or whether side effects appear over time in some people. 

Effects on the aging process

Several theories about the human aging process are being researched. Some focus on genetics, and others on the "damage" that chemical pathways in the body cause to cell structures and tissues in the body. 

The best-known theory of aging caused by damage is called the theory of "free radicals", which are chemically reactive molecules (sometimes called DROs or reactive oxygen derivatives) that can bind to our cells and cause damage. and inflammation in cellular DNA and other proteins.

"Chemically reactive" refers to the fact that free radicals have a missing electron, seeking to snatch the electron from another molecule. This reactive process is called oxidation, resulting in a chain of damage, like falling dominoes. When a free radical steals an electron from a nearby molecule, that molecule in turn becomes reactive, and the chain repeats. Over time, there is a lot of damage, and aging accelerates.

The key to stopping free radical damage and slowing down the aging process is to increase the body's reservoir of antioxidants. These antioxidants are molecules which have an extra electron to "donate" to the free radical, which neutralizes it, or makes it chemically stable. Once the free radical is stabilized, it no longer causes damage, and the chain of destruction is broken. 

Most of the free radicals in our bodies come from normal chemical reactions that are biological in nature, such as those that create energy within our cellular mitochondria. Some outside sources of free radicals include smoking or polyunsaturated vegetable oils.

A lack of antioxidants in the body means more oxidative damage, so one way to deal with this type of damage is to increase the amount of antioxidants available in the body.

Another theory of the aging process concerns the damage of glycation due to high blood sugar levels. Glycation is a process in which excess sugar in the bloodstream "sticks" to the proteins that make up our cells and tissues in our body.

Over time, these glycated tissues form structures that become "advanced glycation products" or "AGEs". The glycated end products inhibit the functions of the proteins to which they are attached, and the proteins are therefore damaged and unable to function or communicate normally. For example, recent research has shown that vision loss, nerve damage, atherosclerosis and other complications of diabetes result from damage to the glycation of various proteins essential for the function of the eyes, nerves and arteries. .

A simple analogy for glycation would be to pour maple syrup on the computer keyboard, and then try to use it.

Glycation increases when blood sugar increases. High fructose consumption also appears to worsen glycation. A recent study showed that fructose accelerates glycation in the body ten times faster than simple blood sugar. And, even worse, this study showed that a single incident of higher post-meal blood sugar (blood sugar spikes after meals) was associated with the formation of AGE precursors.

Ketogenic diets, ketosis, and the resulting ketone bodies slow down the aging process in several ways.

Based on a simple principle, a very limited consumption of sugar and very high in fat (a lot of lipids, some proteins and very few carbohydrates), a ketogenic diet indeed reduces oxidative damage in the body, and increases the production of uric acid and other strong anti-oxidants. Ketosis and the resulting ketone bodies can thus alleviate and reverse several neurological disorders for which oxidative stress at the cellular level is believed to be a main cause. This includes Alzheimer's disease, amyotrophic lateral sclerosis (ALS), stroke trauma, Parkinson's disease, and stroke.

Ketosis promotes mitochondrial function by increasing mitochondrial glutathione, an important antioxidant that works directly in the mitochondria. This is important because orally ingested antioxidants such as those from our food do not reach the mitochondria very easily.

What's more, ketogenic diets lower baseline blood sugar levels, which in turn reduces glycation levels and the formation of advanced glycation end products. All low-carb ketogenic diets thus improve blood sugar control and reduce hunger, with several studies showing that calorie restriction decreases oxidative damage in the body. Low carbohydrate diets in general reduce triglycerides, which are fatty acids in the blood. High triglyceride levels can also cause advanced glycation end products. By lowering our blood sugar, we reduce insulin levels, glycation products, and inflammation. These three factors are closely associated with higher death rates from all kinds of diseases. 

Principle of common sense and reality

Carbohydrates, fructose, sucrose and other "oses" present in large quantities in our food will in the long run have completely overwhelmed the natural and innate cellular self-regeneration capacities of the human organism and its extraordinary faculties from the human body. awareness of Who We Really Are.

Also this diet, which supposes a radical transformation of our eating habits, requires to be motivated to undertake it. Losing weight is not the main goal of the diet. It is only a short-term consequence of the change in diet. Likewise, it can be useful for people suffering from chronic metabolic disease (diabetes) or inflammatory disease (autoimmune). For it to be beneficial, the emphasis must be on a massive increase in plants.
