It is autumn, the leaves take on their beautiful yellow, ocher and red colors. Take the opportunity to honor the first nuts on the market to make this delicious caramel nut tart that will delight the taste buds of young and old alike. An ultra-crunchy shortbread, a nut filling coated with the melting texture of homemade caramel ... a terribly greedy temptation that all your guests will probably not resist! After all, there is nothing wrong with really having fun.

1 shortbread roll
2 eggs
100g caster sugar
60 g butter
100 g finely crushed walnuts
100 g walnut kernels
1 knob of butter for the mold
FOR THE CARAMEL:
20 g butter
10 cl of very hot fresh cream
150g caster sugar

Preheat the oven to 180 ° C (thermostat 6). Cut the butter into pieces and place it in a bowl. Melt it in the microwave for 1 minute. Let it cool down.

In a salad bowl, beat the eggs in an omelet with the powdered sugar using an electric mixer, until the preparation whitens. Add the crushed nuts delicately and the still lukewarm melted butter.

Prepare the pie shell. In a high-sided tart mold (at least 2.5 cm) previously buttered, place the shortbread dough. Fold the edges of the dough. Pour the nut mixture into the pie pan.

Bake the walnut and caramel pie for about 30 minutes until the top is golden brown. Take it out of the oven and set aside.

Prepare the caramel. In a high-sided saucepan, melt the powdered sugar until it turns brown. Then pour the boiling cream over the sugar while mixing with a wooden spoon. Let it boil until there are no more lumps. Add the butter cut into pieces.

Arrange the walnut kernels in a rosette on top of the tart and cover with fondant caramel. Let your walnut and caramel pie cool before eating.

TIPS
You can also try other variations of pie recipes, for example replacing the nuts with pecans or peanuts. For a more polished presentation, sprinkle the walnut pie with a little icing sugar just before serving.
