Note: It takes only 25-30mins to make
~Ripe plantain (2 fingers)
~1 tablespoon of ginger (Powdered or blended)
•Peel and wash plantain
•Cut plantain into irregular shapes
•Get a bowl and pour one tablespoon of ginger into it.
•Salt to taste.
•Also add one and half tablespoon of pepper (or your preferred quantity of powdered pepper for its hotness)
•Add a little water to moisten the mixture.
•Add your irregular diced plantains to your moist mixture.
•Mix till your irregular diced plantains is evenly covered with the mixture.
•Pour oil into frying pan and put on medium heat.
•When oil is hot, fry your irregular diced plantains in batches according to the amount the frying pan can contain.
Spicey fried plantain is ready to serve.
It can be served with gizzards garnished with onions, or as a snack with roasted peanuts, or with plain rice, fried rice and jollof rice.
