Ingredients:
~ 1 cup of black-eyed or brown beans.
~ 2 atarodo (habanero) peppers
~ 1 medium onion
~ Salt to taste
~3 eggs
~ Vegetable oil for frying
Steps:
β’ Soak beans for about 5 hours or overnight and then peel off the back.
β’ Combine beans, pepper and onion and blend or pound in a mortar.
β’ Pour out pasty beans into a bowl.
β’ Add eggs and mix properly.
β’ Add salt to taste.
β’ Heat oil for deep frying until very hot.
β’ Use laddle or spoon to scoop paste into oil.
β’ Keep turning until it becomes golden brown.
β’ Remove and allow excess oil to strain off.
β’ Repeat process until all pastes have to been fried.
Now your black-eyed pea fritters is ready to be served.
The fun part is you can serve it with your favorite porridge.
My favorite porridge is the Hausa porridge.
