My Nigeria favourite meal

My favourite food is pounded yam and egusi soup. It is a dish made with ground egusi seeds, meat, vegetables, and stock. It is a Nigerian dish made with pounded yam as a staple. The soup is thickened with ground egusi seeds and can be served with pounded yam, fufu, or eba.
In order to prepare pounded yam and egusi soup, the first step is to boil the yam in water until it is soft. The next step is to mash the yam and set it aside. The egusi seeds must then be boiled in water until they are soft. The egusi soup is then prepared by frying the egusi seeds in oil, tomatoes, pepper, onion and salt to taste, sometimes a bit of vegetables is being added to the egusi. The soup is served with pounded yam.
There are so many reasons why I love pounded yam and egusi soup.
