Hilsha is the national fish of Bangladesh. It is known as Ilish Mach (Hilsha Fish) in Bangla language and this fish has significant contribution of national GDP as well as employment creation in the country. It is the most delicious food to Bengali people living any part of the world. Various items can be prepared with Hilsha. You can mix it with different vegetables. The most delicious part is its eggs. Hilsha is a popular dish in any kind of party.
Here, we have written about some of the popular items prepared by Hilsha fish. Many persons from Dhaka visit Mawa Ghat to enjoy fresh Hilsha. The Hilsha of Padma river is considered to be very tasty while a significant portion of the fish comes from Chandpur which is situated beside the river Meghna.
Hilsha egg :
It is very delicious and it can be just simply fried or cooked with onion. In the past, Hilsha was not expensive and you could buy eggs separately in local bazaars. Another common variation is Hilsha egg chop. Use of turmeric powder is a must to remove the smell of the fish. Red chili powder is optional and commonly used. Hilsha is soft and tender. So, they require special effort and attention while cutting, cleaning and cooking.
llish polao :
Polao is tasty rice cooked with a bit of oil or ghee.
The fish is just cooked with green chili paste, sour yoghurt, onion paste etc. Garlic and Ginger paste are also added. Then the polao is cooked separately. The two are mixed together and served. It is a very tasty food and cooked in parties.
Sorsha illish:
Sorshe llish is one of the traditional foods in our Bengali culture. This dish is very popular to us. Every one loves to eat Sorshellish. This dish is very tasty. Although Hilsha fish is costly fish, we can't lose our identity. That's why, when we celebrate our Bengali festivals, we must arrange hilsha.
The main ingredient of this dish is "mustard seed." Other ingredients are onions, green chili, mustard oil, turmeric powder, tomatoes etc. All ingredients are mixed with hilsha fish and they bring a wonderful flavor. Hilsha has an individual flavor. This fish dish is not only popular in our Bangladesh but also West Bengal State of India.
Bhapa llish :
There are various types of procedure to cook Hilsha dishes. Bhapa llish is one of the internationally popular dishes. We will not find any person who doesn't like this dish. Bhapa ilish means Steamed Hilsha.
it is boiled for steaming. There are all ingredients such as mustard seed, turmeric powder, green chili, ginger and mustard oil mixed with hilsha fish. This fish is packed in a stainless steel tiffin box or non stick pan and cooked on law heat for 25-30 minutes. This dish is also popular in Bangladesh and in Indian State of West Bengal.
Ilish Onion Curry:
Bangladesh is a land of rivers. That's why, many fishes are available. We like most fish very much. There are many types of recipe to cook fish. Ilish dopeyaju or llish vuna is a common and popular dish in our Bengali culture. This dish's main ingredient is onion. At first, we will mix fish with other spices. We will fry the fish in frying pan. Then we will fry onions. We will not find any person who don't like to eat this dish. Basically, we keep our tradition for cooking.
