Salted Egg Coated with Rice Hull Ash Who loves salted egg? Some called it "violet egg" because of the color coding for identity. Salted egg with tomatoes and onions is one of my ultimate favorite dish. To my surprise, my husband showed me how salted egg is looked like when packed and displayed for sale in Macau. It is a raw salted egg, unlike our salted egg here in the Philippines that is already cooked and ready to eat when placed in the market. Macau's salted egg is coated with rice hull ash that will serve as protector of the raw salted egg's shell. They need to detach the ash from the shell then boil the egg to eat. The preparation of Macau's salted egg is a bit complicated and it takes time to prepare to sell. I think its their way of keeping the salted egg's life longer than our cooked and ready to eat salted egg. What do you think?
