INGREDIENT NOTES

You just need a few ingredients you can easily get from a grocery store.

  • Corned beef brisket – this recipe calls for beef brisket which is a bit of a tough cut. So cooking corned beef briskets this way lends to tender meat.

  • Seasoning packet – just use the pickling spice packet that comes with the meat. Feel free to add a few more mustard seeds if you want.

  • Garlic cloves – just mince garlic.

  • Water – tap water .

  • Beer – just use your favorite lager beer or stout beer brand. Alternatively, see below for other cooking liquid ideas instead.

  • Cabbage – For best results use green cabbage sliced into wedges.

  • Carrots  – cut into large rounds or use whole baby carrots so these hold under pressure.

  • Garnish –  parsley or other herbs to taste.

HOW TO MAKE CORNED BEEF AND CABBAGE IN INSTANT POT

Get the complete ingredients list and instructions from the recipe card below.

  1. Remove corned beef brisket from the package and reserve the pickling spices.

  2. Rinse corned beef and pat dry.

  3. Place the meat directly in the bottom of the Instant Pot insert.

  4. Add spices, minced garlic, (salt if needed), water and beer to the Instant Pot.

  5. Close the lid and turn the vent to the sealing position. Then set to high pressure, manual/pressure cook for 60 minutes for firmer meat, or up to 90 minutes for tender succulent meat.

  6. When done, allow for a full Natural Pressure Release (NPR). Then test the corned beef. If it is not cooked to your liking, turn the Instant Pot back on and cook for another 10 minutes.

  7. Next, take out the corned beef along with 4-6 tablespoons of the cooking liquid, and remove any spices stuck to the meat. Set aside.

  8. Add the cabbage wedges and carrots to the Instant Pot, close the lid and turn the vent to sealing position. Set to high pressure, manual/pressure cook for 3 mins. When done perform a Quick Pressure Release (QPR) to release the remaining pressure and then immediately remove the vegetables.

  9. Transfer to a serving platter and using a sharp knife, thinly slice corned beef against the grain and drizzle the broth on top to moisten. Sprinkle with parsley and serve alongside the vegetables.

MAKING IN THE SLOW COOKER

You can easily make this in the slow cooker. You will need to cook this for about 7-9 hours on low depending on the size of the meat. You would add in the vegetables in at the last 2-3 hours of cooking.

RECIPE TIPS

  • Use a food thermometer to make sure the internal temperature of your beer braised corned beef is at least 145 degrees F.

  • For those following gluten-free, low carb and keto diets, substitute either beef stock or additional water for the beer.

  • Make sure to slice the beef brisket against the grain, in thinish slices.

  • Whilst it is good to use your traditional Irish beer for this, feel free to use your favourite beer #yourfoodyourway.

  • Note that cook times listed do not include the time it takes for the Instant Pot to come up to pressure, or for the pressure to release

  • DELICIOUS VARIATIONS

    • Vary the liquid – you can use other liquids like beef broth, chicken broth, stout beer, chicken stock, apple juice etc.

    • For even more great flavour, add some caramelized onions and crushed garlic in with the cabbage and carrots.

STORAGE

  • Leftovers – is great for meal prep, make up sandwiches, hash, salad, serve with pasta and more.

FAQS

CAN YOU ADD IN POTATOES?

If you are not following a low carb diet and want to make this an even more substantial meal then you can easily add in some potatoes.

Make sure you use baby potatoes (or large potatoes / red potatoes that have been cut up). Add the potatoes in when you add in the carrots and cabbage to cook and you are good to go.

HOW LONG DOES IT TAKE TO COOK INSTANT POT CORNED BEEF AND CABBAGE?

Wondering how long does it take to cook Corned Beef in a pressure cooker? The good news is that it is much faster than cooking the traditional way. #winingatthiscookingthing.

The total cook time will depend on your preference for how you like it. For this 5 pound brisket, I find that a cook time of 60 minutes will give you firmer meat, whilst cooking for up to 90 minutes results in perfectly tender and succulent meat. Smaller briskets will take less time.

Either way, please remember to always use a food thermometer to check for proper doneness. Raw corned beef (that has not been frozen) must reach an internal temperature of at least 145 degrees F to be safely consumed.

HOW TO MAKE CORNED BEEF HASH

Corned Beef Hash is sooooo delicious, I just might love it a tiny bit more than tucking into my corned beef and cabbage supper. This is saying a lot since I really love corned beef and cabbage for supper.

The perfect dish for using up your leftover corned beef (assuming you have any), this is seriously so quick and easy to make. All you need to do is:

  • Sauté sliced onions in a skillet.

  • Add in pieces of cooked potatoes and chopped cooked corned beef.

  • Cook until browned and the edges are nice and crispy.

Enjoy as-is, or serve it up with your favorite style of eggs. Truly delectable!
