INGREDIENT NOTES
Chicken – This recipe used skinless boneless chicken breast which are shredded. Use skin on breasts if you prefer.
Vegetables – You need bell peppers and onions for the veggies. Feel free to use which ever colour peppers and colour onion you like.
Seasoning – you can use a homemade version of seasoning like Taco Seasoning, this Fajita Seasoning or a store bought version to make life easier.
Tomatoes – I used crushed tomatoes but you can use diced or salsa instead.
Heat – optional you can add hot sauce.
HOW TO MAKE CROCKPOT CHICKEN FAJITAS
Get the complete ingredients list and instructions from the recipe card below.
Add all of the ingredients to your slow cooker insert.
Place the lid on, and cook for 3 – 4 hours (I recommend 3 1/2 hours) on high or 6 – 7 hours on low.
When done, remove the chicken from the slow cooker and shred using two forks. Return the shredded chicken to the slow cooker and gently stir to combine with the rest of the ingredients.
Serve with tortillas and the toppings of your choice.
RECIPE TIPS
If you like your bell peppers with some crunch, wait to add the bell peppers 30 minutes to an hour before the end of cooking.
Cook for a shorter amount of time if you prefer to have chicken you can slice instead of shred.
Place the cooked chicken in a bowl and use a hand mixer to easily shred.
Instead of tortillas, serve this over rice or stuffed into baked potatoes.

Swap the meat – use chicken thighs, turkey breast, or pork.
Spice it up – add more hot sauce, add some diced jalapeños, or use poblaño peppers in place of the bell pepper.

Freeze – Use this recipe as an awesome freezer meal prep solution. Yeap, simply cook in this recipe in advance, cool and then freeze in Ziploc bags to thaw and cook when needed.
Thaw the bag overnight in the refrigerator, then dump everything in the crockpot and set to cook the next morning.
