Add the feta cheese and the cherry tomatoes to a baking dish, drizzle on the oil and sprinkle on the Italian seasoning.
Bake for 25-28 minutes at 400F / 200C / Gas 6, or until the tomatoes burst and the feta is soft and starts melting.
Meanwhile, cook pasta as directed on the package, reserving 1 cup of the pasta water.
Remove the baking dish from the oven and add the reserved pasta water, chicken, and buffalo sauce, stirring to combine. Then add in the pasta, toss to coat, and serve.

Add stock to the Instant Pot insert, followed by pasta (make sure pasta is submerged), tomatoes, feta nestled into the pasta, Italian seasoning, and garlic.
Close the lid, turn the valve to sealing position, and set to high pressure / manual pressure for 4 minutes.
Once done, perform a quick pressure release.
