"Glad midsommar" / Happy Midsummer! Midsummer is a holiday celebrated near the summer solstice, mainly in northern Europe. We Swedes love this holiday and celebrate with food, dance & songs. It is now that we are starting to overindulge in fresh potatoes. By fresh potatoes is meant potatoes that are harvested before full ripening and contain less starch. A little sweet, silky smooth, not much that beats the first fresh potato of the year! Served with sour cream, chives, butter, some type of meat (traditionally it should be meatballs that I made for the rest of the family😊). Today I also made Deviled eggs with a mixture of mayonnaise, sour cream, Swedish Västerbotten cheese, salt and black pepper. #Food

I can see with the amount of potatoes in the photo about over indulging in fresh potatoes. Did you just boil them with dill and eat with the sour cream mixture? Delicious😋
