Cinnamon Roll Pancakes
The first time I prepared this dish I couldn't believe how easy and delicious was, this is a very versatile recipe cause you can eat this pancakes as a sunday breakfast or as a desert and it goes amazing.
This is the best way to eat a treat that taste exactly like cinnamon buns without spend so many hours in the kitchen.
Don't forget to top them with eggs and bacon or sausage, with some fresh fruit salad or you can keep it simple and eat them with cream cheese frosting. It's gonna blow your mind.
Ingredients
Pancakes
1 ¼ cups all-purpose flour
2 teaspoons baking powder
3 Tablespoon sugar
1/2 teaspoon salt
1 cup milk
1 Tablespoon vegetable oil
1 large egg, beaten
Cinnamon Filling
1/3 cup of melted butter
3/4 cup brown sugar
1 Tablespoon ground cinnamon
Cream Cheese Glaze
4 Tablespoons butter
2 ounces cream cheese
1 1/4 cups powdered sugar
1 teaspoon vanilla extract
Instructions
Cinnamon filling: Mix the butter, with the brown sugar and the cinnamon. Scoop the filling into a small zip bag, set aside and let it rest for 10 minutes. So the texture is thick.
I recommend you to prepare the filling first so it can rest while you're doing the other procedures.
Cream Cheese glaze: Heat the butter and cream cheese until melted. Whisk together until smooth, then whisk in powdered sugar and vanilla. Set aside.
Pancakes: Grab a medium bowl and whisk together flour, baking powder, sugar and salt. Add the wet ingredients, milk, oil and egg just until batter is moistened.
Heat over low a nonstick pan. Pour about 1/2 cup of pancake batter onto your skillet. Cook it for 3 minutes (each side)
Use an ice cream scoop to spread the batter into a circle.
Snip the corner of your baggie of cinnamon filling and squeeze a spiral onto the top of the pancake batter in a swirl.
Flip the pancake with spatula once you see the bubbles starting to pop on top not before.
Once you finish the batter, serve the pancakes with drizzle of glaze or your favorite topping and enjoy!
