Eggs are a wonderful protein to work with. They can be served any time of the day, even if you’re having “breakfast for dinner.”

You know what you think when you see an egg.

Incredible. Edible.

That ad agency had it right. The egg is, indeed, an incredible edible. As a frugal protein source, it can’t be beat for versatility, taste, and affordability.

Basically it’s a good cheap eat! Must be why we go through six dozen a week at my house!

WHAT CAN YOU MAKE WITH EGGS?

Eggs on their own can be baked, boiled, scrambled, poached, and fried. They make fantastic additions to waffles, crepes, quiches, egg bakes, custards, pies, cakes, and popovers. They are a key ingredient in Aebleskivers, helping to make them light and fluffy with whipped egg whites.

Speaking of whipped egg whites? Can you really have Lemon Meringue Pie without eggs? I think not.

HOW TO SHOP FOR EGGS

Purchase eggs that are within their sell by date and have clean, untracked shells. They should be refrigerated at the store and refrigerated once you get them home.

I regularly buy my eggs at ALDI for less than a dollar a carton; our family goes through six dozen a week, so I love this price.

Lacking a great price at ALDI, I look for them on clearance at my local grocery store. Provided the eggs aren’t past their sell by date, I snatch up sale eggs and make a plan to use them quickly.

HOW DO I KNOW IF AN EGG IS STILL GOOD?

One rule of thumb is the float test. Place the uncooked egg (in its shell) in a bowl of water. If the egg lies on its side, it is very fresh. If it stands up, some oxygen has infiltrated the shell’s barrier. It is still good for baking and will make easy-peel hard boiled eggs.

However, if it floats, the egg may be bad. The USDA recommends cracking it open; if the odor or the appearance is off , the egg should be discarded.

DO THE SELL-BY DATES ON EGGS MATTER? 

Raw eggs in the shell are good for 3 to 5 weeks in the refrigerator. There should be a pack date and possibly a sell-by date on the carton. Sell-by dates must be within 30 days of packing, meaning that the eggs could be good for at least a week after the sell-by date.

Egg carton dates are not a federal requirement, and there is some difference from state to state.

WHAT SHOULD I SERVE WITH EGGS FOR DINNER?

While some folks may balk at eggs for dinner, the French have been serving eggs for the evening meal for eons, especially since they don’t generally serve eggs at breakfast!

Serving eggs for dinner is a great way to enjoy an affordable protein. You can recreate breakfast for dinner or serve a quiche or egg bake alongside a salad or other veggie side dishes. 

HOW LONG IS A COOKED EGG GOOD FOR?

Hard cooked eggs are good for a week, under refrigeration. All other prepared egg dishes should be consumed within 2 to 4 days.

CAN YOU FREEZE EGGS?

While eggs in the shell cannot be frozen, egg whites and beaten whole eggs can be frozen. 

WHAT THINGS CAN YOU MAKE WITH EGGS?

Eggs are super versatile and can be made into soooo many things! They are a “must have” in the kitchen. Eggs are an incredible source of protein.

You can serve them hard boiled in sandwiches, salads, and on their own. Or fry them, scramble them, or bake them. Breakfast sandwiches are a fantastic on-the-go meal. Eggs are an important component of many baked goods as well.
