Today Tuesday we continue on our culinary adventure around the world, today I bring you an emblematic recipe from the Basque country. TUNA MARMITAKO It is very easy to do, please try to make this delicious dish, I have done it several times for meetings with friends and I always get the applause. Ingredients For 6 people 1 kg of tuna (preferably bonito) 5 potatoes 1 onion 2 green peppers 1 Carrot 2 cloves of garlic 1 L of Fish broth 200 ml white wine 15 grs Sweet paprika 15 g 3 tablespoons of color 60 grams of Tomato sauce 2 bay leaves Salt and pepper Olive oil Be careful with this step. I cut the tuna into cubes, put salt, pepper and paprika on them, and seal them in olive oil. In the original recipe they place the raw fish at the end of cooking. But you know cooking is a matter of taste. Cut the onion into julienne strips, the pepper into strips, and the minced garlic. In a large pot we put a little oil and sauté everything over medium heat. We lower the heat to a minimum, and add the chopped carrot in wheels. After 5 minutes, add the color, the paprika, salt and pepper. Add the white wine, and let the alcohol evaporate. We peel the potatoes and cut them into rustic cubes, and add them to the stew. We raise the heat and add the broth, the bay leaves and the tomato sauce, stir a little and once the broth begins to boil, we reduce the heat to a minimum. We leave it to simmer for 30 minutes, after this time, place the tuna cubes, stir a little with great care, we leave it for 5 minutes. We turn off the heat, and let it rest for 10 minutes. !!
