Ham with mustard

Welcome to my chef today I will set you a specialty that I personally made.

Let me tell you a little bit about the jerk. Sunka is the most delicious baked on the bone, specially prepared at home in the way described in this recipe. Sunka coated with mustard is baked, and half-cooked in its own juices with the addition of apple wine, and it is decorated with potato and orange slices. So let's start.

For 16-20 people

From the ingredients you need:

  • Ham (4 -5kg)

  • 400 ml of cider

  • 3 tablespoons English mustard

  • 90g brown sugar

  • For lemon and mustard sauce you need:

  • 4 tablespoons olive oil

  • juice of 1 lemon

  • 1 teaspoon crystal sugar

  • 2 tablespoons grainy mustard

  • salt and pepper

  • and 150 ml of cooking sour cream

1.Put the ham in a large bowl, pour over it with hungry water, and let it soak for at least 12 hours.

2.Drain and wash the ham. Put two pieces of foil in a large pan, long enough to cover the ham.

3.Pour the apple wine into the pan. Place the grid over the foil and place the Ham on the grid. Insert the thermometer, if you use it, and the thickest part of the hammer.

4.Lightly cover the Ham with foil, leaving room for air to flow. Place the ham in the middle of an oven preheated to 160 degrees and bake for 20 minutes every 500 g. The thermometer should show 75 degrees. Remove the ham from the oven and allow to cool for a few minutes.

5.Increase the oven temperature to 230 degrees. Place the ham on a cutting board, drain the juices from the foil, and discard the foil. Coat the ham with mustard and brown sugar.

6.Return the ham to the grill in the pan. Cover the non-greasy parts with foil, return to the oven, and bake, turning the pan for 15-20 minutes if necessary, until the surface gets a golden brown color.

7.Meanwhile, prepare the lemon and mustard sauce: put the olive oil, lemon juice, crystal sugar, salt, and pepper, in a glass jar with a lid and shake well to mix the ingredients.

8.Pour the sour cream into a bowl and mix the mixture with mustard and lemon. Season if necessary and leave in the fridge.

9.Cut the ham into slices and serve it hot or cold with lemon and mustard sauce.

And all I have to do is tell you how to coat the ham before baking:

  • Remove the skin, leaving a thin layer of fat, Discard the skin.

  • Cut the surface of the ham in the shape of a sloping grid so that the coating penetrates the grease.

  • Coat the greasy surface with a thick layer of mustard.

  • Press the sugar into the mustard with your fingers, making sure to cover the entire surface evenly.
